Easy No-Knead Homemade Bread


This easy no-knead homemade bread requires just a few simple ingredients, a little bit of time and practically zero effort. It took me almost 30 years to try making bread because I figured it would be a labour-intensive process that was beyond my abilities. Human beings have been perfecting the art (and science) of bread-making for millennia! Who am I to mess that up, right? 

This bread recipe was a game-changer though! Not only did it only require 3 simple ingredients (plus water), it can be whipped up in a bowl using an ordinary kitchen spoon and it comes out perfect every time. 

It only takes a couple minutes to prepare and you don’t even have to touch the dough! Just mix flour, yeast and salt with a little warm water and let it rise.

Not only will it take you next to no time to prepare, it costs just pennies to make and has no added sugar, preservatives or other unwanted ingredients. Try it once and you will wonder why anyone pays upwards of $5.00 a loaf at the grocery store.

 

Artisan-Style Homemade Bread 

This bread is a little bit denser and has much larger holes in it than than fluffy, uniform sandwich-style bread. Many people call this “artisan bread.” I have a little bit of a hard time with that since I believe the term “artisan” should be reserved for things made by people with real talent. This requires zero talent.

My recipe calls for white, all-purpose flour simply because that’s the type of flour that most people have on hand. But if you’d rather use whole-wheat it will work just as well. I haven’t tried it with other ancient grains (Einkorn, etc.) or gluten-free options as of yet.

You can also add toppings to this bread like cheese, herbs, olives or sundried tomatoes to add a little flavour and make this like the decadent artisan breads you might pick up at your local bakery, so feel free to get creative!

This is also a really nice bread to dip in olive oil and balsamic vinegar or as part of a spread or cheese board. Or as a base for French toast. Or just serve hot with butter and perhaps some homemade strawberry jam?? It also makes a great bread to make homemade stuffing out of for Thanksgiving (or any day, really). So I guess what I’m saying is that it’s really versatile and you just need to make it try it any which way you like!

Easy No-Knead Homemade Bread

Yield: one loaf

Ingredients

  • 3 cups of flour (all-purpose or whole wheat)
  • 1/2 tsp active dry yeast
  • 1 tsp salt
  • 1 1/2 cups warm water

Instructions

  1. Combine dry ingredients in a large mixing bowl.
  2. Add water and mix with a spoon until ingredients are well combined (even if it looks a bit raggedy, that’s okay).
  3. Cover with a kitchen towel and let it sit on the counter at room temperature for anywhere between 8 to 24 hours (I usually let mine rise for the full 24 hours if I plan enough ahead of time).
  4. After the dough has risen (you will see it has expanded and bubbles have formed).
  5. Dump your dough onto a well-floured surface and, with well-floured hands, form the dough into a ball. Let it rest there for 30 minutes and preheat the oven to 450° F.
  6. Put your dough ball into a deep baking dish and cover with a lid (or aluminum foil). Stick it in the oven to cook for 30 minutes.
  7. After 30 minutes, take the lid (or foil) off and bake for an additional 10 to 15 minutes.
  8. Let cool for 10 minutes before serving. Serve fresh from the oven with butter, or with a side of oil and vinegar for dipping!

      Lukewarm should do – you don’t want it too hot.

    Does the flour need to be sifted or can you “scoop” from the container without it making the bread overly dense?

      Hi Debra – sifting flour is usually done to ensure that any “lumps” are broken up and the measurement is more accurate. It can also help to ensure even mixing and aeration of the flour.

    Can I use an enamel dutch oven with lid as my baking dish?

    And should I dissolve the yeast in water first?

      Yes! I often use an enamelled dutch oven for my bread baking. Just grease it first. With the yeast, you can either let it dissolve in water first and let it proof for 10 minutes or just throw all the ingredients in together all at once. I’ve tried both and haven’t noticed a huge difference in the results.

For Mother’s Day this year, my husband is teaching our daughter to empty the dishwasher on her own. It may seem like a small feat, and for anyone who has kids who already do this and more, this may seem like nothing to celebrate. But for all of the moms who understand how much quicker and easier it is to just “do it yourself,” slowing down and allowing our daughter to take ownership of this even if it’s not perfect or takes twice as long is a huge milestone, both for her and for us as parents!

While it may sometimes feel like the work that we do day in and day out is just mundane and repetitive, the way we show up every day over many years with our children will have a huge impact on the type of people they’ll grow up to be.

What we teach them—the skills we pass on and the values we instil—will help to shape who our children become as adults, and who they become as adults will help to shape what our future world looks like.

It may seem as simple as emptying a dishwasher, but what this really symbolizes is that we’re raising a capable human being who takes responsibility for contributing to our household and is a valued member of our family. And since she will someday grow up to run her own household, possibly be a mother herself, and contribute to our future society, that means that we, as parents, (and especially us moms!), have immense power to shape what the future looks like through the simple actions we take every day to teach and empower the next generation.

All of that to say, thanks for everything you do moms! You are more valued and powerful than you know.

Me shopping for Easter candy for my kids, and walking out empty handed because it’s all full of absolute garbage!

I don’t mind my kids having sugar now and again, but I draw the line at food dies, seed oils and artificial ingredients. (Or at least, I try!)

Hey, we’re not perfect, and yes, our kids will get Easter candy on Sunday morning. Ryan has already bought some and I’m sure he didn’t check all the ingredients like I do! I’m fine with the 80/20 rule most of the time. But the meta question here, is why are these types of ingredients allowed in foods to begin with? Especially food marketed toward kids!

Yes, it’s “junk food.” I don’t expect it to be HEALTHY. But it could be made better by omitting the known carcinogenic ingredients that have been linked to everything from ADHD to hormone imbalances to cancer!

Folks, we must demand better. We DESERVE better, and so do our kids.

We said goodbye to a family pet yesterday. My mom has had Zoe since I was a teenager, and Evelyn has grown to love her during her visits with nanny.

It’s never easy to say goodbye to a family member, human or furry. But we don’t shelter our kids from death either. Evelyn was with us when we found our rabbits dead. She went with my mom to say goodbye to her other cat a year ago. And she knows where the chickens go when it’s their time.

Having a healthy relationship to death is important. It is, after all, the only certainty in life.

Today Ryan is heading down to clean out his dad’s place after he passed last week. They had a strained relationship, so our kids never knew him as their grandpa. But still, it’s never easy.

It does, however, teach us to be grateful for every day we’re alive, and to appreciate the ones we love while we’re still together, because you never know how much time you have left.

When I first started homesteading, gardening, and trying to be more self-sufficient, I had no idea what I was doing. Everything was new to me, and I had no one in my life to teach me the ropes.

Never before have we had access to so much information at our fingertips. Whether you have a question you need answered, are looking for a tutorial to walk you through a specific task or are searching for a recipe to help you figure out what to make for dinner, all you have to do is Google it.⁣
